Pancakes are one of those rare indulgences I allow myself. The buttery, sweet goodness is such a delight first thing in the morning. The issue is that I’m trying to cut wheat from my diet and a lot of the gluten free varieties don’t measure up. That is, until I found the Birch Benders Paleo Pancake mix.
I came across Birch Benders one day and thought I’d give it a try. It’s grain free, gluten free and soy free with a low glycemic index. Exactly what I needed.
I tried the mix on two different occasions. I used water one time which is called for in the recipe, and raw milk the other. I also tried cooking with coconut oil and raw butter. Both variations were very tasty. The batter is very thick, but can be thinned to your liking.
I was VERY impressed. The taste and texture was exactly as pancakes should be. My dad, who is very picky about pancakes, loved them! I paired it up with duck eggs, butter and some real maple syrup. Absolutely delish!
Birch Benders is not paying me to say they have a great paleo mix. I just really wanted to share my new find with everyone!
